Pollo Tropical, a Caribbean food chain restaurant in Florida, recently increased its wages as well as providing benefits in childcare leave, company-paid educational programs, and medical plans. Amid a labor shortage facing the restaurant industry in the United States, the 169-restaurant chain is among those returning to normal staffing levels. "We are very encouraged by the strong momentum we are seeing in markets that are more fully staffed," said Dirk Montgomery, chief financial officer. "As we continue to improve staffing levels, we are optimistic that our sales momentum will accelerate."
