A common northern African dishchicken and kale stewis on the lunch program at Deering High School in Portland, Maine. It is part of a project to diversify district school menus, especially for students who eat free or low cost meals under the National School Lunch Program. The recipe is one of three created by Khadija Ahmed, who works at Good Shepherd Food Bank and hopes new immigrants arriving in the district will see the meals as a sign of welcome. The other two meals were kidney beans with spiced beef and cabbage slaw and chickpeas and chicken over yellow rice. Next fall, based on the positive feedback, students will be able to choose jollof rice, spiced beef, cornmeal porridge, and other African-inspired dishes. Portland is home to a growing number of immigrants from Angola, the Democratic Republic of Congo, Burundi and Rwanda, and students speak more than 50 languages.
