Eight years after starting a pop-up dinner service, Nihal Elwan and her team of 20 at Tayybeh Catering have opened a full-service restaurant in Vancouver, B.C. The refugee women, who fled Syria or other Middle Eastern war zones, cook their ancestral foods. In 2014, Elwan, who speaks Arabic, was interpreting for families fleeing Syria when she began to wonder how she could help refugee women. Within a year after the first meal, the pop-ups turned into dinners every six to eight weeks. Since it started, Tayybeh has employed more than 50 people, catered hundreds of events and served tens of thousands of meals.
